Lunchtime inspiration

I'd say lunchtime is my favourite time of the day. It's an hour where I put down the textbooks, curl up on my bed and watch TV on my laptop, with a mug of coffee and a plate of good food. My toastie machine (Wilkinsons £5,the best fiver you'll ever spend.) is normally my go-to at lunch, but today I fancied something different, something that would keep me going through writing my linguistics essay. So I made this tasty little number, which is an adaptation of a dish I saw on a Sainsbury's advert. It ticks all the boxes really. Its quick, easy, cheap, the ultimate comfort food and light and healthy too. Isn't much to look at, but my god does it make up for it in taste.It's great for dinner as well and is a great taste of the Mediterranean on a rainy October day.


Easy Peasy Med-style Pasta

serves 1

Ingredients:

50g-75g spaghetti, depending on how hungry you are
handful of cherry tomatoes, halved
1/4 pack of feta, cubed
2-3 sundried tomatoes, diced
1/4 red pepper, cut into bite size chunks
pinch of salt
pinch of black pepper


Method:
1. Cook past according to packet instructions. If you're feeling especially lazy or are too hungry to wait, fill a pan with boiling water from the kettle. Once cooked drain and return to pan. Set aside.
2. put tomatoes and peppers in baking tin. A small round cake tin is ideal if you have one. Season with salt and pepper before putting under a  preheated grill on the highest setting for 10 minutes, or until the tomatoes begin to pucker and sizzle. Once cooked, remove from heat and add to spaghetti.
3. Add feta and sundried tomatoes. Give everything a good mix until the feta has begun to melt.
4. Put onto a plate and serve. Enjoy.
